Salmon Recipes

Baked Salmon Recipe:

Total Time: 1 hr
Prep Time: 15 mins
Cook Time: 45 mins
Servings: 2

Ingredients:
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon dried basil
6 tablespoons light olive oil
2 (6 ounce) salmon fillets
1 teaspoon ground black pepper
1 tablespoon fresh parsley, chopped
1 tablespoon lemon juice

Directions:
1-In an average glass bowl, prepare marinade by mixing garlic, light olive oil, salt, pepper, basil, lemon juice and parsley.
2- Put salmon fillets in a medium glass baking dish, and cover with the marinade.
3-Marinate in the refrigerator about 1 hour, turning occasionally.
4-Preheat oven to 375 degrees F (190 degrees C).
5-Put fillets in aluminum foil, cover with marinade, and seal.
6-Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.

Baked Salmon with Herb Sauce:

Total Time: 17 mins
Prep Time: 5 mins
Cook Time: 12 mins
Servings: 4

Ingredients:
1 tablespoon butter
1 salt and pepper
1 1/2 lbs salmon fillets
1 tablespoon parsley
1/2 teaspoon dill
1 green onion, finely chop, using just the green parts
1/2 cup mayonnaise
1 lemon wedge

Directions:
1- Cut fillet in 4 serving pieces. Put large surface of fillet toward edge of Pyrex baking dish with center open. Pierce fish, dot fish with butter, and cover with plastic wrap.
2- Microwave average (50%) for five minutes.
3- Combine mayonnaise, parsley, onion, and dill jointly.
4- Spread mayonnaise mixture on top of fillets and microwave Medium (50%) covered for five to six minutes before serving.
5- Garnish with lemon wedges.
6- If steaks are used, arrange with slim ends toward middle of dish.
7- One inch steaks should be microwaved 5 minutes a medium power, covered with mayonnaise mixture and microwaved for 5-6 minutes longer.

The Ultimate Salmon Fillets:
Total Time: 30 mins
Prep Time: 10 mins
Cook Time: 20 mins
Servings: 3-4

Ingredients:
1/3 cup sour cream (light is fine) or 1/3 cup yogurt
2 teaspoons prepared mustard
1 lb salmon fillet
3 tablespoons mayonnaise (light is fine)
2 tablespoons parmesan cheese, grated
2 teaspoons dried dill weed
2 teaspoons onions, finely minced
1/2 cup cheddar cheese, grated (optional)
Paprika

Directions:
1- Preheat oven to 450 degrees.
2- Partially thaw fillets and cut into serving size pieces, if frozen.
3- Put in a greased baking dish.
4- Mingle sour cream or yogurt, mustard, onion, dill, and mayonnaise.
5- Spice with salt and pepper.
6- Spread mixture over fish.
7- Heat 20 minutes per inch of thickness of fish if frozen or 10-12 minutes if thawed.
8- When just done, shake over with the cheeses and a dash of paprika.
9- Broil 1 minute or until the cheese is bouncy and flecked with brown.
10- Dish up with lemon wedges.
