While pretzels seems like a lot of steps, they are very easy to make. It takes about 2 hours from start to finish, and once cooked, the result of this action is obvious. A very short time increase makes quick work of the dough. A rapid boil in a pot of water outside is it soft and shiny egg wash them. It is my belief that the use of a beer in the dough and boiling water improves the taste of yeast, but it is entirely a matter of choice.
Another factor to consider is the size of the pretzel. Those are sold in most places, are simply enormous. In modern times this is too big for most people in one sitting. When this size is of interest, you can have the recipe just 6 pretzels. I think it is about 8 or 10 in the perfect size. Cooking time may need to be adjusted when you use the larger size.
Soft Pretzels at Home
2 1/2 teaspoons salt
2 packets of instant or quick rise yeast
4 - 4 1/2 cups bread flour
1 cup water plus 1/2 cup beer, OR use 1 1/2 cups water
3 tablespoons sugar
7 cups water plus 1 cup beer, OR use 8 cups water
1/2 cup baking soda
1 teaspoon agave syrup
1 egg yolk
1 tablespoon water
Coarse salt for sprinkling
In a mixing bowl 1 1/2 cups flour with yeast. Heat warm water and 1 cup beer 1/2 cup or all of the water at will, with sugar and 3 tablespoons of salt. Make sure the liquid is warm to the finger and not too hot. Add the liquid in the bowl and down to mix the ingredients. Then increase speed and beat for about 3 minutes. If your console is heavy and can be a knead very stiff dough hook switch and add 2 1/2 to 3 cups more flour. If you do not have a mixer heavy, give, take the bowl and with your hands, take the flour to make a stiff dough. Knead for 8 to 10 minutes. Let stand for 20 minutes while preparing the remaining ingredients.
In a large saucepan, place the water 7 cups and 1 cup beer or only 8 cups of water. Add 1/2 cup of baking soda with water. When the beer is in the mixture, the liquid is provided for the foam significantly. Bring this mixture to a boil.
Mix the egg yolks in a small bowl, add a tablespoon of water and agave syrup. If agave is not available, it might tasteless corn syrup is used. Mix well and set aside. Do you have a pastry brush handy. Prepare two large baking sheets by aligning with parchment. Spray the parchment with cooking spray. Preheat oven to 400 degrees.
Turn dough out onto a flat surface. You may not need all the flour on the surface if the dough is stiff enough. Share. The dough into 8 to 10 pieces Each piece should be rolled into a rope about 24 inches long. Take rope U-shaped, and then wear across the ends for making pretzels.
